Production
Our vegetable kitchen is the heart of our Petrella production and what makes it so special. Here, our employees start washing and cutting the freshly delivered herbs and vegetables before sunrise. This is because we process fresh ingredients for our Petrella, which end up in our creamy Petrella on the same day.
The cloth pressing process is a traditional and gentle way of producing fresh cheese. The curdled milk is filled into cheesecloth. This allows the whey to drain as slowly as it needs to. The traditionally produced fresh cheese is then processed further.
Petrella is a cream cheese preparation because, in addition to the cream cheese mixture, other delicious flavoring ingredients such as crunchy bell pepper are stirred into it. The finished product is then called a cream cheese preparation.
Syneresis is the natural separation of the cream cheese mass and the liquid it contains (= whey). So if you ever see this in your Petrella packaging, you don't have to worry that your Petrella is bad. You can simply pour the liquid away or stir it back into your Petrella. This will not affect your taste experience.
Our Petrella is made from pasteurized milk, i.e. the milk is heated in such a way that any pathogens it may contain are rendered harmless. We therefore do not use any raw milk in our products.
For over 30 years, we have combined the advantages of traditional craftsmanship and modern industrial processes to produce our delicious Petrella. With the help of the cloth pressing method, we turn Weserbergland milk into our wonderfully creamy fresh cheese mass, which we then refine with fresh herbs and crunchy vegetables. We have always focused on gently processing our ingredients.
